Curbanies Muffins

Dry ingredients:
  • 2 cups flour 
  • 2 teaspoons baking soda 
  • 1/2 teaspoon salt 
  • 2 teaspoons cinnamon
  • 1 cup sugar
Moist ingredients:
  • 3 eggs
  • 3/4 cup canola oil
  • 1 teaspoon vanilla
  • 2 cups Curbanies
  • 1/2 cup shredded coconut
  • 1 cup chopped apples
  • 2 cups shredded carrots
Mix:
Mix dry ingredients in a bowl first. Add moist ingredients. Stir and then place in paper lined muffin tins. Recipe makes about 24 muffins.

Bake 20-23 minutes at 350 degrees F.
